Got some juicy lemons and some left over rice???? Lets get cooking then!For some nice and tangy lemon rice.This dish is ideal for lunch,dinner. Keep in mind the fact that the lemon juice has to be added judiciously to suit your palate so that you do not end up with a bland rice. I enjoy this dish with rasam or just a bowl of salad,raitha,which means you can have it with any curry of your choice.I have read in Aarogyam Health Magazine that The lemon in the rice aids in the absorption of iron in your body due to its high vitamin C content. so health conscious people can also have it with no worries .
Also this Southern-Indian dish can be easily put together ,if you are always in a hurry[ like me]..it's also ideal for young bachelor men [once again like me] who wants to impress his love or family by cooking a tasty healthy dish..I wish to publish my own Book one day focusing mostly on young people of my age[and this dish will be in that for sure] who are afraid to cook in the kitchen thinking that it'd be a disaster.but with easy recipes like this i wish to inspire them to cook more and more with easy recipes ...and gradually make 'em a good cook in the Kitchen!

Lemon Rice
INGREDIENTS
Cooked Rice......2 cups basmati rice [you can also use leftover rice]
Ginger..................1 tbsp [grated]
Green Chillies.....1-2 slit
Lime Juice...........2-3 tbsp
Tumeric powder...1/4 tbsp
Salt........................to taste
Oil
TEMPERING
Mustard seeds................1 tbsp
Cumin seeds...................1 tsp
Dry Red chillies...............1-2
Curry leaves.....................8-10
Dried split chickpeas/garbanzo peas......1 tbsp [soaked in water for 2 hrs]
Peanuts.............................1 tbsp
METHOD
1. Heat a little oil in a pan and add the tempering ingredients.
2. Fry till the seeds crackle and then add ginger and green chillies [altogether it takes about 2-3 mins approx].
3. Mix the lime juice into the rice and add turmeric powder. Check the salt.
4. Now add the rice to the tempering and stir well.
5. Finally garnish with some coriander leaves.
6.And your done!!
