Today i am going to share with you a different non-vegetarian recipe -"Coriander Chicken Roast"...This is not a usual kerala style chicken roast.It is something different.The main ingredients used for this are coriander seeds and fresh coriander leaves..Actually i got this recipe idea from Chef Lakshmi's Tv show and she prepared this with mutton .As i do'nt like mutton that much,i thought i'd try it out using chicken or beef....finally i tried it with chicken ,as a result i got one more entry for the chicken recipe collections...About this recipe, it is very simple and quiet easy to prepare...I named this dish as Coriander Chicken Roast because the core ingredients were from coriander.I cooked it for lunch for my sister and her fiance yesterday ...and i was really happy to see the smile on their face..


CORIANDER CHICKEN ROAST

INGREDIENTS

For The Marinade

Chicken: Boneless pieces 1kg
Salt 
2-3  tbsp Chilli powder
1/2 tsp Turmeric powder
3-4 tbsp Coriander powder
2 tbsp Garam masala


Put all the ingredients for the marinade in a large, deep bowl. Mix well. Put the chicken pieces into this marinade and coat well with it. Cover the dish with cling wrap and keep aside for 30-45 mins.by this time you can make the gravy for the roast

For The Gravy

Corriander seeds: 3 tbs[i actually made  powder of it by grinding them]
black pepper powder 1/2 tbs
Cumin seed:1/2 tsp
Turmeric Powder:1/2 tsp
Kashmiri chili powder: 1 tsp
Onion : 3 nos

Tomato Paste 3-4 tbsp
Ginger : meduim sized
Garlic : 6 pods[you can use ginger-garlic paste also about 2-3 tsp]
Green Chili: 4 nos
Oil: 1 tsp
Onion: 4 nos
Curry leaves: 1 spring
Coriander leaves : some


  • Heat oil in a pan..Add the sliced onions ,saute well then add the curry leaves and green chillies..[see pic]
  • After a while add the tomato paste and saute till it is fragrant
  • add ginger-garlic paste and the remaining things and saute till the oil separates
  • Now add  Maggi Masala Magic Cube [which is a secret ingredient]and mix it with a gravy and cook for some time[now let's go back to the chicken]
  • By now the chicken pieces must be well marinated
  • Now heat some oil in a pan and fry them until they turn to a golden color[see pic]

  • Now add the roasted chicken pieces to the gravy that was made earlier and cook  for about 7-10 mins ,also should add some curry leaves during this time.
  • Once you start getting that great smell it means that the chicken is ready to be served
  • Now garnish it finally with some freshly chopped Coriander leaves which i would say is the star of this dish
