Two In One

Looking to spice up your typical omelette? Then you guys should try Pizza Omelette, Yep that's right! Here, I’ve come up with a simple Pizza Omelette recipe. A light and delicious omelette with yummy topping is just similar to pizza. This pizza omelette is a delightful choice for breakfast, brunch, lunch & dinner too. And this was probably the most cheesiest food experiments i've done so far.

A Pizza Omelette is a great way to use pizza ingredients without the hassle of making a pizza crust. You could go crazy with any toppings that you can think of since they will all work well. Just a note, if you want a thicker base, maybe add an extra egg and 1/2 spoon baking power or baking soda. maybe a dash of cream.

Another great thing about this Pizza Omelette recipe is that it is very quick to make and very filling. In fact maybe a bit too filling and heavy on the stomach if you have it whole.

Ingredients;

4 eggs, beaten with 4 tablespoons milk till fluffy. Add salt and pepper to taste.

1 cup pan sautéed vegetables/meat of your choice. Use a combination of onion, tomato, green/ spring onions, capsicums, sliced mushrooms, minced chicken/sausages etc. chop up and add to a lightly oiled pan, sauté without oil till the onions are translucent. Transfer to a plate and keep it aside.

1 Cup Grated Mozzarella cheese

2 tablespoon butter

4-6 tablespoon Pizza Sauce

Coriander Leaves

Origano Spice Mix

Method;

Heat a frying pan on medium, add half of the butter and toss it around to melt.

Mix the sautéed vegetables into the egg mixture. Add the egg mixture to the pan and twirl the pan around till the egg has spread into the pan. Take a fork and lightly scramble the centre, to create layers. Do this before the egg sets. Drizzle the rest of the butter along the edges of the pan to brown the egg. When the edges have browned, and the egg is almost cooked, add the mozzarella cheese over the egg, lower the flame and allow the cheese to melt. Ease a spatula under one half of the omelet, gently fold over into half and cook for another minute.

Repeat the above same process to make one more layer of omelette.

Now when eggs are almost set on surface & still lil moist, spread the pizza sauce over half of omelette. Add some more cheese if you want. And cover it with with the 2nd layer of the omelette.

Sprinkle some more cheese, chopped coriander leaves & origano spice mix on top. That's it, the pizza omelette is ready to serve!

These days pizzas are almost as common as having an omelette. That's why i tried combining​ these two into one and end result was a delicious omelette filled with mozzarella cheese. Serve this and trust me you will truly feel as though you’re eating a slice from your favorite pizza shop.
