So I'm back to my blogging days......Also should mention about my come back to what i've been well known for ie: cooking!! Which i've not been doing lately or to be honest which i decided to give up..but all thanks to my one n only Sis n my good friends who actually convinced my to pick my tools n begin again...that's it with the blah blah blah....now let me get into the real stuff!!
Eggs, When it comes to eggs i just simply adore 'em cooked just about any way it is.As a matter of fact i even like having 'em raw also (people give crazy expressions when i say that) After any Non-veg food eggs are something i enjoy having and mostly on a regular basis. A version of the basic omelette i guess is very much loved in everyone,since its easy to prepare...yet tasty n healthy!!
The Indian style of making the basic omelette includes the use of turmeric powder, onions, tomatoes, spices, and green chillies. I have gone one step further, threw in some vegetables and a pinch of garam masala. It changes the flavor profile of the Masala Omelette by leaps and bounds. You have to try it to believe it....

Masala Omelette
Ingredients:
- Eggs - 4
- Shallots - 4, finely chopped
- Tomatoes - 2 large ones finely chopped
- Green chilies - 2, finely minced
- Milk - 2 tbsps
- Capsicum - 4 tbsps, finely minced (optional)
- Carrot - 4 tbsps, finely minced (optional)
- Salt to taste
- Black pepper powder - 1/4 tsp
- Turmeric powder - 1/4 tsp
- Garam masala powder - 1/4 tsp
- Coriander leaves - 2 tbsps, finely chopped
- Curry leaves - just to garnish
- Oil - 2 tbsp (or butter)
Method:
- Beat the eggs till frothy. Add the rest of the ingredients except the oil and whisk well.Or u can even saute the veggies separately & then drizzle them on top of the egg mixture after adding the egg mixture into the pan
- Drizzle oil in a pan, allow it to heat up. Once hot, reduce flame, add half of the egg mixture and swirl it around the pan. Cook on low to medium flame till the sides are cooked and the underside is slightly browned. The center will appear uncooked and liquid-y. Its fine. Slowly flip over and cook the other side for about 10-12 seconds.
- Slide the omelette onto a plate and serve with bread or buns...that's it
